Aroma:

medium, intense fruity of green fruit and herbaceous sensations.

Taste:

to the taste it is perceived at the beginning with a sweet sensation followed by bitter artichoke and persistent pungency. Light sensations of fresh almond.

    Between Florence and Siena, near San Casciano Val di Pesa, is produced the Extra Virgin Olive Oil Greppi di Silli.
     
    The olive grove, consisting of about 1500 plants, covers about 3.5 hectares and is composed of the main cultivars in this area of Tuscany such as Frantoio, Leccino, Correggiolo, Leccio del Corno, Pendolino, Moraiolo, and Madonna Impruneta and Maurino. Being cultivars very different between them, the collection and processing is carried out separately according to the level of maturation reached from olives.
    This type of collection made more difficult by the fact that the cultivars are not divided to areas on the ground but at random, while requiring a greater work effort, however, allows to extract oil from a homogeneous product of olives and produces different types of Extra Virgin Olive Oil Greppi di Silli that are much more stable over time while preserving the most of their valuable characteristics.
