The Extra Virgin Olive Oil Novolio by Alfredo Cetrone is an unfiltered extra virgin olive oil, the first fruit of each season's harvest. Once filtered, it is used in all the other products of the Alfredo Cetrone company. Novolio is packaged in clear glass bottles to highlight the stunning emerald green of the freshly pressed olive oil; since it is bottled within a few hours of pressing, you may notice a slight sediment at the bottom of the bottle. It is the first olive oil of the year, certainly exceptional raw, and will enhance the aroma and flavor of your dishes.

Aroma:

to the smell it is perceived in a complex and fascinating way, featured by intense herbaceous smell with stand out remindings of fruity artichoke, cardoon and tomato.

Taste:

the palate opens with elegant notes of artichoke, cardoon, tomato, and balsamic herbs of sage and mint, with a strong and harmonious bitterness and spiciness. It has great structure and elegance.
