Often, next to the wording Extra virgin olive oil there is the adjective Fruity .
According to the International Olive Oil Council the adjective fruity indicates the presence of the typical fragrance of healthy, fresh and cultured olive at the right degree of ripeness.
The first distinctive feature of an extra virgin olive oil is in fact its perfume, identical to that obtained by pressing an olive between your fingers.
Fruity means therefore the intensity of perfumes that the oil gives off both on the nose and retro-nasally with the tasting.
The fruity oil is classified according to a scale of intensity, established at regulatory level:

  • Light fruity oil
  • Medium fruity oil
  • Intense fruity oil

What does the different fruity intensity of the oil depend on?

There are several factors that can determine the fruity intensity of the oil. The main ones are:

  • the time of the olive harvest
  • the olive processing method
