In Tuscany, the most common pairing to prepare beans is undoubtedly the one with tomato sauce, thus obtaining the famous Fagioli all'Uccelletto. According to the father of Italian cuisine, Pellegrino Artusi, the curious name of the recipe, originates from the cooking method with particular aromas such as sage, used precisely for the preparation of the famous bird roasts.
