The Cerrosughero company owes its name to a cork oak forest that covered the hill where the company is located in Tuscia, a few kilometers from Tuscany. The olive groves are located on hilly terrain of tuff and limestone origin with a microclimate particularly favorable to the production of olives. They extend for about 20 hectares and have 5,000 plants of different ages belonging to the Caninese, Frantoio, Leccino, Maurino and Pendolino cultivars.

The olives are harvested at the beginning of veraison, at different times based on the cultivar, and transported to the mill the same day. The olive harvest begins in the first ten days of October, at the beginning of veraison, when the green of the olives begins to turn black. At that moment the olive gives the best of itself, expresses its aromatic complexity in its entirety, the result will be a more balanced oil that will be able to maintain the polyphenolic heritage essential for conservation. The Cerrosughero company's mill was built in 2010. The continuous cycle allows for a control of the processing temperature, which does not exceed 26°. The olives arrive in perforated crates that allow the air to circulate and the drupes not to be crushed, maintaining their integrity. The next step, namely defoliation and washing, is delicate and important because it allows a clean product to enter the mill, free from impurities. The malaxation takes place with careful temperature control in order to maintain the sensory profile intact. The oil is then filtered and stored in stainless steel tanks under nitrogen and then packaged on the spot.
