Giuseppe Giusti: Aceto Balsamico di Modena of the best quality

For more than 400 years, everything at Acetaia Giuseppe Giusti in Modena has revolved around the production of the best Aceto Balsamicos. The official founding year is 1605 - this is the reason why the family business celebrates the Giusti Day: On this day, Acetaia invites 135 handpicked restaurants and bars around the world to create refined dishes and cocktails with Giusti products for their guests.

However, the activities of the Giusti family related to balsamic vinegar go back much further into the past: This is proven by a corresponding mention in the registers of the guilds of Modena, which Duke Cesare d'Este had created in 1598. In that year he had to move the capital of his duchy to this then rather sleepy city by order of the emperor. At that time, the Giustis were already busy producing and selling Lambrusco, fine sausage specialties and balsamic vinegar, with the latter already being their main focus.

Almost three centuries later, in 1863, the family made a name for themselves with the first written recipe for a Balsamico di Modena, before doing it again half a century later, during the 1910s and 20s , the so-called Belle Époque, earned a round of gold medals at fairs and exhibitions in Europe for their tireless pursuit of balsamic quality. The high point of that glorious time was finally the aforementioned appointment as the exclusive purveyor to the royal court in 1929.

But development did not stop there: far from resting on their laurels, the Giustis are constantly experimenting with new forms and methods of cultivating their own vineyards and, above all, aging their various balsamic and wine vinegars. The aim of all these efforts was and is, of course, constant improvement in quality. However, despite all the innovations, the Giustis still see the basis for outstanding products in the conscientious selection of the grapes and in their tried-and-tested system for slowly boiling down the must. Added to this is the necessary care when choosing suitable wood for the barrels in which their musts and balsamic vinegar mature. And, last but not least, the time: indispensable for an excellent balsamic vinegar!

For some time now, the Giustis have also been focusing on the organic production of all raw materials for their high-quality balsamic vinegars and other spice preparations. The various grapes for the musts - the basis of their balsamic and wine vinegars - have for years come from the controlled organic vineyards of Azienda Agricola Giusti, a family-owned farm.

Balsamic vinegars by Giuseppe Giusti

In our online shop we offer a wide range of balsamic vinegars and some flavored wine and balsamic vinegars from Giusti. The offer ranges from classic balsamic vinegar with IGP or DOP seal from the traditional series to products from organic farming. The former are easily recognizable by their Art Nouveau-style labels embossed with historic medals, and by the capsule and wax-sealed stopper.

The organic vinegars and liquid spice mixtures, on the other hand, come in square glass bottles with a cork stopper and a simple, modern label.

The traditional series from the Giusti vinegar manufacturer is structured according to a very logical scheme: starting with Aceto Balsamico di Modena IGP with 1 silver medal it continues in the form of balsamic vinegars with two to five gold medals each. Roughly summarized, the aroma of the individual balsamic vinegars in this series becomes more complex and concentrated the more medals a product receives. Reasons are the longer maturation time as well as the use of older wooden barrels and more mature wine vinegars.

This series is completed by two extremely mild, almost syrupy in consistency, very old balsamic vinegars with DOP seal: Unlike the five first-mentioned balsamic vinegars, which are filled in 250 ml bottles, these come in small 100 ml bottles and packed in a wooden box - an ideal gift for real gourmets! The same applies, of course, to the various collector's boxes, each of which contains the products of a series in miniature bottles. Each box offers a small voyage of discovery into the world of high-quality balsamic vinegars.

We also offer two other rarities from Giusti in our online shop: The Calamaio and the < strong>Fiaschetta di Patrizia. 'Calamaio' is Italian for 'inkwell' and indeed this vial is reminiscent of the classic cubic glass containers that are still used today to hold high quality ink. This hand-sealed bottle, on the other hand, contains a very concentrated, flavorful spice elixir.

The same applies to the content of the Fiaschetta di Patrizia; like the Calamaio, this is only produced in limited quantities.

Finally, we would like to point out the balsamic vinegars from organic production: First, two pure Balsamico di Modena IGP, the one with 1 seal being a very aromatic balsamic vinegar, the one made in young wood matured. Thanks to its sparkling, fresh nature, it is ideal for salads. The Aceto Balsamico di Modena with 2 seals in turn gives with its aromas of ripe fruits , accompanied by hints of liquorice and black pepper, gives dishes of all kinds a special, balanced touch.

The two flavored vinegars from Giusti's organic series should also not go unmentioned: they are the result of a successful combination of wine vinegar and fresh fruit juice, which of course is also comes from organic farming. Thanks to their fine, sweet and sour taste, these liquid spice preparations can be used in many ways: raw in salad dressings as well as for marinating and glazing fish and meat.

Il Denso Balsamico di Modena IGP: What is it?

The Balsamic Vinegar of Modena IGP 3 Gold Medals from Giusti is dedicated to the ancestor who created the corresponding recipe at the beginning of the 20th century. This high-quality balsamic vinegar from Giusti also has the nickname "Denso", which means something like "dense": A reference to its particularly dense, viscous consistency. Because this balsamic vinegar is made from grapes that are harvested late and then dried in the sun.

After boiling, very mature wine vinegar and also long-matured balsamic vinegar from centuries-old barrels are added to the must obtained from these types of grapes: This is how the Giusti balsamic vinegar "Il Denso" gets its characteristic aromas of Plum jam and ripe red fruits harmoniously combined with hints of honey and vanilla.
