Giuseppe Giusti: Aceto Balsamico di Modena of the best quality

For over 400 years, everything at Modenaer Acetaia Giuseppe Giusti has been about producing the best aceto balsamicos. The official year of foundation is 1605 - this is the occasion of the family business, every year on May 16 (16-05) the Giusti Day: on this day Acetaia invites 135 handpicked restaurants and bars around the world to create refined dishes and cocktails with products from Giusti for their guests.

However, the Giusti family's activities in the field of balsamic vinegar go much further back: this is evidenced by a corresponding mention in the registers of the guilds of Modena, which Duke Cesare d'Este had created in 1598. That year, the emperor had to move the capital of his duchy to this city, which at the time was rather sleepy. At that time, the Giustis were already involved in the production and sale of Lambrusco , fine sausage specialties and balsamic vinegar, with the latter already being the main focus at that time.

Almost three centuries later, in 1863, the family made a name for themselves with the first written recipe for a Balsamic Vinegar of Modena before turning back half a century later, during the 1910s and 20s , the so-called Belle Époque, a round of gold medals at trade fairs and exhibitions in Europe for their tireless pursuit of balsamic quality. The highlight of that glorious period was the aforementioned appointment as exclusive royal court supplier in 1929.

But the development did not stop there: far from resting on their laurels, the Giustis are constantly experimenting with new forms and methods in the management of their own vineyards and especially in the maturation of their various balsamic and wine vinegars. The aim of all these efforts was and is of course a constant improvement in quality. However, the Giustis still see the basis for outstanding products - with all innovations - in the conscientious selection of the grapes and in their tried and tested system for slowly boiling down the must. In addition, the necessary care must be taken when choosing suitable woods for the barrels in which their musts and balsamic vinegar mature. And, last but not least, time: indispensable for an excellent balsamic vinegar!

For some time now, the Giustis have also focused on organic production of all raw materials for their high-quality balsamic vinegars and other spice preparations. For example, the various grapes for the musts - the basis of their balsamic and wine vinegars - have for years come from the organically farmed vineyards of Azienda Agricola Giusti , a family-owned farm.

Balsamic vinegars by Giuseppe Giusti

In our online shop we offer a wide range of balsamic vinegars as well as partially flavored wine and balsamic vinegars from Giusti . The offer ranges from the classic Balsamic Vinegar PGI or DOP seal from the traditional series to organically grown products. The former are easily recognizable on the labels in the Art Nouveau design with the embossed historical medals as well as on the capsule or the stopper sealed with wax.

The organic vinegars and liquid spice mixes, on the other hand, come in square glass bottles with cork stoppers and a simple, modern label.

The traditional series of the vinegar manufacturer Giusti is structured according to a very logical scheme: starting with Aceto Balsamico di Modena IGP 1 silver medal it continues in the form of balsamic vinegars with two to five gold medals each. Roughly summarized, the aroma of the individual balsamic vinegars in this series gains complexity and concentration, the more medals a product carries. The reasons lie in the longer ripening time and in the use of older wooden barrels and more mature wine vinegars.

This series is completed by two extremely mild, almost syrup-like, very old balsamic vinegars with a DOP seal in their consistency: Unlike the first five balsamic vinegars, which are filled in 250 ml bottles, they come in small 100 ml bottles and packed in a wooden box - an ideal gift for real gourmets! The same applies, of course, to the various collector's boxes, each of which contains the products of a series in miniature bottles. Each box offers a small journey of discovery into the world of high-quality balsamic vinegars.

We also offer two more rarities from Giusti in our online shop: the Calamaio and the < strong> Fiaschetta di Patrizia . "Calamaio" is Italian for "inkwell", and in fact this bottle is reminiscent of the classic cubic glass containers in which high-quality ink is still filled today. This vial, which is closed by hand, however, contains a very concentrated, flavorful spice elixir.

The same applies to the content of the Fiaschetta di Patrizia; Like the Calamaio, it is only produced in limited quantities.

Finally, I would like to point out the organic balsamic vinegars: First, two pure Balsamico di Modena IGP , the one with 1 seal being a very aromatic balsamic vinegar, which is found in young wood matured. Thanks to its lively, fresh nature, it is ideal for salads. The Balsamic Vinegar of Modena PGI 2 Gold medals in turn lends ripe fruit with its aromas , accompanied by hints of liquorice and black pepper, dishes of all kinds a special, balanced note.

The two flavored vinegars from the organic series by Giusti should also not be left unmentioned: They are the result of a successful combination of wine vinegar and fresh fruit juice, which of course also comes from organic farming. Il Denso Balsamico di Modena IGP: What is it?

The Balsamic Vinegar of Modena PGI 3 gold medals by Giusti is dedicated to the ancestor who created the corresponding recipe at the beginning of the 20th century. This high-quality balsamic vinegar from Giusti also bears the nickname " Denso ", which means "tight": A reference to its particularly dense, viscous consistency . Because this balsamic vinegar is made from grapes that are read late and then dried in the sun.

After the must has been boiled down, very ripe wine vinegar and also long-matured balsamic vinegar from centuries-old barrels are added to the must from this type of grape: this is how the Giusti balsamic vinegar " Il Denso " gets its characteristic aromas of Plum jam and ripe red fruits, which combine harmoniously with a hint of honey and vanilla.
