Truffle
Truffle is certainly one of the finest products and there are several species of truffle. Among the most appreciated is the Tuber aestivum Vitt. (also known as Truffle Scorzone) which is harvested from May to December, but the best known and most appreciated is certainly the White Truffle (Tuber Magnatum Pico) which is harvested from the end of September to the beginning of January. Where there is truffle there is no pollution: due to its characteristics and the symbiotic relationship it establishes with the surrounding nature, the truffle does not survive herbicides, pollution and anything else alters the environment.
Truffle embellishes first courses and other recipes thanks to its unmistakable flavor and aroma. The recipes for using truffles in the kitchen change depending on the Italian regions and the different traditions.
