PAOLO CASSINI - Taggiasca olive oil (single variety) from Liguria

The Cassini family has been growing olive trees of the Taggiasca variety for many generations. In 1962 the first, traditional plant with mills and press was installed for the production of extra virgin olive oil. In 1993 they switched to a modern continuous cycle extraction plant which was improved and perfected over the following years in order to obtain a superior quality extra virgin olive oil.

The company's goal is to maintain extremely high quality standards to produce quality and not numbers.
Currently the company has a modern, latest generation continuous cycle system entirely in stainless steel that works in two phases, that is, it extracts the oil without adding water during centrifugation. This allows to obtain more fruity, fragrant extra virgin olive oils with a much higher number of polyphenols.
The organoleptic characteristics of Taggiasca Extra Virgin Olive Oil are thus further enhanced by this type of processing: currently in Liguria only a few oil mills, in addition to the Paolo Cassini company, work in two phases and therefore produce extra virgin of superior quality.
